Sant\u00e9 Canada exige aupr\u00e8s de l\u2019industrie agroalimentaire la d\u00e9claration obligatoire des 10 allerg\u00e8nes et sources de gluten sur l\u2019emballage de produits alimentaires. Devant le nombre croissant de tests exig\u00e9s et du co\u00fbt exorbitant des m\u00e9thodes de d\u00e9tection d\u2019allerg\u00e8nes telles que l\u2019ELISA (Enzyme-Linked Immuno-Sorbent Assay), la c\u00e9l\u00e8bre mention de pr\u00e9caution \u00abPeux contenir … \u00bb est devenue trop r\u00e9pandue. En l\u2019absence d\u2019une m\u00e9thode de d\u00e9tection plus performante et moins on\u00e9reuse, les personnes allergiques continueront de s\u2019imposer soit une di\u00e8te restrictive ou un risque pour leur sant\u00e9. <\/span><\/p>\n Une \u00e9quipe de chercheurs de trois universit\u00e9s qu\u00e9b\u00e9coises (Universit\u00e9 de Sherbrooke, UdeS, Universit\u00e9 de Montr\u00e9al, UdeM et <\/span>Universit\u00e9 Laval) s\u2019est associ\u00e9e \u00e0 deux agences gouvernementales (Agence canadienne d’inspection des aliments, Sant\u00e9 Canada) et de deux organisations de consommateurs sans but lucratif (Allergie Alimentaire Canada et C\u0153liaque Qu\u00e9bec) pour d\u00e9velopper une nouvelle m\u00e9thode de d\u00e9tection d\u2019allerg\u00e8nes plus robuste, plus sensible et moins dispendieuse que l\u2019ELISA. Il s\u2019agit d\u2019une m\u00e9thode bas\u00e9e sur une sonde Raman compos\u00e9e d\u2019une nanocorne de carbone (NCC) dans laquelle un marqueur est encapsul\u00e9 et sur laquelle un anticorps est greff\u00e9. Le signal Raman sera plus pr\u00e9cis et plus d\u00e9taill\u00e9 que le signal en fluorescence de l\u2019ELISA et permettra l\u2019acquisition parall\u00e8le des signaux de plus d\u2019un allerg\u00e8ne \u00e0 la fois. L’objectif est de proposer \u00e0 l’industrie agroalimentaire un dispositif efficace, robuste et moins dispendieux. \u00c0 terme, ce levier technologique permettra aux parties prenantes d\u2019am\u00e9liorer l\u2019usage de l’\u00e9tiquetage de pr\u00e9caution des allerg\u00e8nes et de mieux prot\u00e9ger les consommateurs allergiques.<\/span><\/p>\n L’objectif de ce projet de th\u00e8se<\/strong> propos\u00e9 est d’optimiser la synth\u00e8se des NCCs par plasma en mettant l’accent sur la purification et l’encapsulation du colorant. La personne retenue devra (i) optimiser la nanostructure de NCCs,(ii) affiner les protocoles de purification et d’encapsulation de colorants (iii) identifier les colorants \u00e0 encapsuler dans les NCCs \u00e0 partir des aspects distinctifs de leur spectre Raman (iv) caract\u00e9riser les sondes par microscopie \u00e9lectronique en transmission pour mieux comprendre l’interaction entre les colorants et les NCCs. Ces travaux permettront d\u2019identifier les m\u00e9canismes d’encapsulation des NCCs afin d\u2019am\u00e9liorer la sonde R-ELISA et \u00e9tablir des bases solides pour la s\u00e9lection et le protocole d’encapsulation.<\/span><\/p>\n Cette th\u00e8se sera encadr\u00e9e par le Pr. Nadi Braidy de l\u2019UdeS et le Pr. Richard Martel de l’UdeM. Les travaux seront principalement r\u00e9alis\u00e9s \u00e0 l’Institut interdisciplinaire d’innovation technologique (3IT) de l’UdeS, notamment dans le nouveau laboratoire de microscopie \u00e9lectronique en transmission, et des stages seront pr\u00e9vus dans les laboratoires de l\u2019UdeM. Le projet se r\u00e9alisera, en collaboration \u00e9troite avec l’Universit\u00e9 Laval, les partenaires du projet et collaborateurs dans des laboratoires internationaux. La personne candidate b\u00e9n\u00e9ficiera ainsi d’un environnement de recherche international exceptionnel o\u00f9 \u00e9tudiants, ing\u00e9nieurs, professeurs et industriels travaillent main dans la main pour d\u00e9velopper les technologies du futur pour am\u00e9liorer la sant\u00e9 publique et l’industrie alimentaire au Canada.<\/span><\/p>\n <\/p>\n – D\u00e9tenir un dipl\u00f4me universitaire et une maitrise en g\u00e9nie ou en science en chimie, mat\u00e9riaux ou physique.<\/span><\/p>\n – Exp\u00e9rience en synth\u00e8se ou en caract\u00e9risation de nanomat\u00e9riaux de carbone.
