Combined with the intensification of their organic, fair trade and slow food agricultural production and the variety of their by-products, the presence of indigenous food plants has initiated an increase in consumption options and thus opened up a fragmentation of their market. This raises the question of the impact of their production and circulation patterns on the indigenous and peasant agri-food systems with which these native plants have historically been associated. From the nutritional reinforcement of the diets of the poorest rural populations promoted in the 1970s by the FAO to the current revitalisation of the pre-Hispanic cultural heritage associated with this plant promoted by territorial labels, the inclusion of an imaginary associated with ethnic identity and ancestral wisdom &#8211; which these plants can evoke &#8211; is attracting a growing demand from a market promoting new modes of eating, such as healthy-food or even super-food for the more privileged urban classes concerned with a healthy lifestyle. In recent years, there has been an expansion of amaranth production, dissociated from traditional food systems based on the Milpa, and the distribution of its by-products in new forms (leaf, flour, biscuits, etc.) for both the local and international markets. Associ\u00e9es \u00e0 l\u2019intensification de leur production agricole biologique, de commerce \u00e9quitable ou encore de la slow food ainsi qu\u2019\u00e0 la vari\u00e9t\u00e9 de leurs produits d\u00e9riv\u00e9s, la pr\u00e9sence des plantes alimentaires indig\u00e8nes a initi\u00e9 une augmentation des options de consommation et du coup a ouvert une fragmentation de leur march\u00e9. Se pose alors la question de l\u2019impact de leurs modalit\u00e9s de production et de circulation sur les syst\u00e8mes agroalimentaires autochtones et paysans auxquels ces plantes indig\u00e8nes ont \u00e9t\u00e9 historiquement associ\u00e9es. Du renforcement nutritif des r\u00e9gimes alimentaires des populations rurales les plus pauvres promu dans les ann\u00e9es 1970 par la FAO \u00e0 la revitalisation actuelle de l\u2019h\u00e9ritage culturel pr\u00e9hispanique associ\u00e9 \u00e0 cette plante promu par les labels territorialis\u00e9s, l\u2019inclusion d\u2019un imaginaire associ\u00e9 \u00e0 l\u2019identit\u00e9 ethnique et \u00e0 la sagesse ancestrale \u2013 que ces plantes peuvent \u00e9voquer- attire une demande croissante d\u2019un march\u00e9 promouvant des nouvelles modes d\u2019alimentation, comme la healthy-food ou encore la super-food pour les classes urbaines les plus favoris\u00e9es pr\u00e9occup\u00e9es par un mode de vie sain. Depuis quelques ann\u00e9es on observe ainsi une expansion de la production d\u2019amaranthe dissoci\u00e9e des syst\u00e8mes alimentaires traditionnels bas\u00e9s sur la Milpa et la distribution de ses produits d\u00e9riv\u00e9s sous de nouvelles formes (feuille, de farine, de biscuits etc.) aussi bien pour le march\u00e9 local que pour le march\u00e9 international.
